Security 'hardening' of Mac OSX, particularly those used for remote access.
Getting to grips with Leopard's new firewall and/or ipfw which I think is still there in Leopard
2008 suggestions

1. the Terminal and unix commands
2. Being productive with your mac - handy apps to save time (i.e. Quicksilver, Spotlight, Path Finder, iGTD, etc)
3. Exploring iLife - iMovie, iPhoto, iDVD
